    <title><![CDATA[In the Vineyard]]></title>
    <description><![CDATA[Spring, such a beautiful time of the year.  After what seemed to be a long winter, the focus has once again shifted to the vineyard.  The pruning of the vines is just about complete and we are very pleased that there wasn't too much winter damage.  In the coming weeks. we will start dehilling the vinefiera vines (chardonnay, pinot grigio); we don't anticipate any surprises but one never knows with these varieties.  With spring comes a renewed excitement of another growing season and the hope that this vintage turns out to be the best.  Keeping my fingers crossed.<br />

    <title><![CDATA[First Blog]]></title>
    <description><![CDATA[Whoa!! Another Harvest is now complete and 2008 is now in the history books. Although conditions in 2008 were not ideal for many grape varieties, we still are very excited about this year's harvest. Mario and I have had some interesting times with some of the viniferous varieties which we received from Niagara. There is always much discussion about the winemaking techniques to be used when conditions are not as perfect as one would like, but that is what winemaking is all about.<br />

<br />

This year has brought about a new variety to Willow Springs. We will be producing Merachal Foch for the first time. The French-American variety is definitely looking to be a blockbuster wine. I can't wait to update you on the progress of this mostly overlooked wine. As for all the other viniferous wines (merlot, cabernet franc and sauvignon, and chardonnay) they are all on track to becoming great wines. I'd like to make a special mention about the merlot, which although the conditions were not ideal, seems to be on track to becoming a showstopper.<br />

    <description><![CDATA[Stouffville, Ontario (March 27th, 2007)   Willow Springs Winery attended ...Spring Uncorkedo the very successful premier fundraising gala for The Rotary Club of Hamilton. This fundraiser, sponsored by Scotiabank and Binatech System Solutions, is in support of literacy and youth leadership for inner city children and families in Hamilton and has raised over $120,000. The gala, now in its fifth year, was held amidst the historic elegance of the great hall in the beautifully restored LIUNA Station, formerly the Canadian National Railway Station in downtown Hamilton.<br />

Tickets at $125 per person were limited to 350 exclusive guests. Guests enjoyed a special tasting of the very best wines Ontario has to offer from 15 of the province's top wineries including the most popular wineries - Willow Springs, Angel's Gate, Pilliteri, Strewn, Lailey, Stoney Ridge, Reif Estates, East Dell and Legends. In addition, 13 of the top restaurants in Hamilton and Ancaster including<br />

Acclamation Grill, Barangas On The Beach, Seven Windows Restaurant and Lounge, Its All Greek To Me and Dalina Mediterranean Restaurant, provided a cornucopia of culinary creations.<br />

    <description><![CDATA[Stouffville, Ontario (February 12th, 2007)   Mario and Julie Testa, Proprietor's of Willow Springs Winery hosted the Canadian Cancer Society's campaign kick off reception for Stouffville's inaugural Relay For Life to a full house of enthusiastic supporters in the Wine Shop at their winery on Bethesda Road.<br />

The Stouffville event Chair Terry Neprily welcomed the many guests to the winery, many of whom were visiting this local attraction for the first time. Terry also introduced the Relay For Life Honorary Co-Chairs Sue Sherban and Keith Acton. Their remarks were both motivational and emotional, as cancer has touched all of us directly or indirectly.<br />

<br />

...Organizing the first ever Relay For Life event in Stouffville has received an overwhelmingly positive response and endorsement from the community,o stated Terry Neprily ...We are already well underway of achieving our goal of 20 relay teams including a team from Willow Springs to participate in the overnight event to be held at Willowgrove on McCowan Road commencing June 15th.o<br />

...The first phase of our plan calls for the construction of a new wine cellar.o ...With our recent marketing and sales partnership with the LCBO, production and distribution of our locally grown and produced VQA quality wines will increase,o stated Mario Testa, owner of Willow Springs. ...The size of our present processing and storage facility has reached maximum capacity and is inadequate to handle any further growth. The new wine cellar will provide the necessary space to store our wines during production.o<br />

The second phase of the expansion calls for the construction of a Visitor Pavilion on top of the new wine cellar. With the increasing popularity of the winery our present facility cannot adequately handle the volume of visitors arriving at the winery and vineyard for tours and tastings.<br />

...In the long-term, it's our intention to position Willow Springs Winery and Vineyard as a regional tourism destination and a major, icon attraction in Whitchurch-Stouffville and York Region,o said Mr. Testa.<br />

    <title><![CDATA[New Winery A Family Affair]]></title>
    <description><![CDATA[The recipe for a great wine includes the finest in grapes, an abundance of patience and an Italian heritage, suggests a wine maker who recently began selling his wares in York Region.<br />

Willow Springs Winery has been open on Bethesda Road in Whitchurch-Stouffville for about six weeks. Early reviews indicate owners Mario and Julie Testa have a bright future.<br />

<br />

&quot;So far, we've had an excellent reception,&quot; said Julie. &quot;We're already doing repeat business. It's great when the faces become familiar.&quot;<br />

<br />

With the six-year old vineyards located on their 12-acre property, the Testas build a 2,400 square foot, duel-purpose building. Half is used as a wine processing facility, complete with barrels, while the rest is an open-concept retail outlet.<br />

<br />

As well as wine, the Testas sell country crafts, flavoured honey, jams, candles and wine-related items.<br />

<br />

Willow Springs Winery also features a free wine tasting bar, which lets customers sample its offerings. Willow Springs Winery handles both fruit and grape wines. The couple was recently thrilled to learn their 1998 MacIntosh won the bronze award in the fruit category at a provincial competition.<br />

<br />

Mario became a wine maker strictly as a hobby. The Testas, like many Italians, made homemade wine throughout the ages. &quot;Family members from way back made wine for the family table. It's the natural thing to do,&quot; he explained.<br />

<br />

The couple has easy access to the winery, living next door with two children Farrah, 5, and Falon, 3.<br />

<br />

Mario is proud of his heritage. He displays an antique grape press in the middle of the winery. It carries a great deal of sentimental value, having come from his grandfather. Amelia Testa came to Canada many years ago. One of his first purchases on Canadian soil was a wine press.<br />

<br />

The press was passed on to his son Gino. When Mario and Julie opened the winery, it had a place of honour.<br />

<br />

Willow Springs Winery has just posted release dates for Vintage 2000. It includes Autumn Blush and Seyval Blanc in June, Unoaked Seyval Blanc in August, Golden Delicious Cider and Geisenhium in September and Iced Apple and Unoaken Seyval Blanc in November.<br />
